Recipe: Sandy’s Famous Carrot Cake

Ingredients

Cake
  • 2-3 cups grated carrots
  • 4 eggs, unbeaten
  • 1 tsp. salt
  • 2 cups all purpose flour
  • 2 tsp. cinnamon
  • 1 3/4 cups sugar
  • 2 tsp. baking powder
  • 1 1/4 cup Wesson oil
  • 2 tsp. baking soda
  • 1/2 cup pecans
  • Preheat oven to 350 and grease/flour (3) layer round cake pans.
Cream Cheese Frosting
  • 1 box of confectioners or powdered sugar
  • 1/2 stick butter
  • 8 oz. pack cream cheese
  • 2 tsp. vanilla

Instructions

  1. Cream sugar and oil until light and fluffy.
  2. Add eggs (one at a time) and cream well.
  3. Sift in dry ingredients.
  4. Fold in carrots and nuts.
  5. Pour divided into the the (3) cake pans and bake for 25-35 mins.
  6. Allow to cool and frost.
