Recipe: Sandy’s Famous Carrot Cake
Ingredients
Cake
2-3 cups grated carrots
4 eggs, unbeaten
1 tsp. salt
2 cups all purpose flour
2 tsp. cinnamon
1 3/4 cups sugar
2 tsp. baking powder
1 1/4 cup Wesson oil
2 tsp. baking soda
1/2 cup pecans
Preheat oven to 350 and grease/flour (3) layer round cake pans.
Cream Cheese Frosting
1 box of confectioners or powdered sugar
1/2 stick butter
8 oz. pack cream cheese
2 tsp. vanilla
Instructions
Cream sugar and oil until light and fluffy.
Add eggs (one at a time) and cream well.
Sift in dry ingredients.
Fold in carrots and nuts.
Pour divided into the the (3) cake pans and bake for 25-35 mins.
Allow to cool and frost.
