Recipe: Rena’s Mexican Cornbread

Summary: This is truly one of my husband’s faves. You so have to try it. I’m telling you, it will be one one of your go to family favorites, and it’s really quite simple.

Ingredients

Meat/cheese mixture
  • 1 1/2 lbs. ground chuck (may substitute w/ground turkey)
  • 6-8 jalapeno peppers (Here, you can substitute w/Mexican Velveeta cheese and or Pepper-jack.)
  • 1 lg. onion
  • 1 lb. Velveeta cheese (see substitution above)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 can cream corn (or Mexi-corn)
Cornbread (May substitute with your favorite mix)
  • 1 1/2 cup self-rising cornmeal
  • 1 cup milk
  • 2 eggs
  • a pinch salt and pepper
  • 1/2 tsp. baking soda

Instructions

  1. Preheat oven to 400 and grease 9 X 13 baking dish.
  2. Mix to combine all ingredients above.
  3. Set aside.
  4. Brown ground meat and add onions until clear.
  5. Drain grease and return to heat.
  6. Add cheese and chopped peppers.
  7. Mix cornmeal eggs, corn, milk, salt, pepper, and baking soda.
  8. Stir until blended.
  9. Pour 1/2 batter into baking dish.
  10. Pour in meat/cheese mixture and top with remaining batter.
  11. Bake at 400 for 45 min. until top is light golden brown and center is done.
