*I finally added the link to Jerry’s Chili.  Sorry for the delay.  Enjoy and share with your friends!

You know, it’s still a little cold out, and I can’t resist a warm bowl of chili.  But since my hubby is sick, I’ll hold off on his simple chili recipe and opt for some Puffy Tacos instead.  I promise to link soon.  Sound good?

Just spice up your fave taco recipe using ground turkey and some of these puffy tacos.

All you have to do is, place your tortillas (I prefer Mission because they are less chewy.) in a pan of hot canola oil, bend with a spoon, and allow to fry quickly on both sides.  (Don’t you wish you had a bowl of that hot chili to serve along side, or stuff with the same?  A fried Chili-to, no less.)  Since were all out on that end, why not go for some of Jen’s Taco Soup.

Do you love Italian food but long for something different?  If the answer is yes, you will want to try this recipe.  It’s called Mozzarella Pie, and it’s as easy as as any skillet recipe you have tried.  My family has enjoyed this recipe for years and my sister previously posted it on her site.  So why not click the link and see what the fuss is all about.  Think of it as Lasagna without the pasta.  For this and more great recipes visit Jen @ Balancing Beauty and Bedlam.

Inspired by Kara and her Kitchen Creations, I wanted to make something Asian for my family.  I knew it had to be something we’d all eat, with me being the pickiest of all.  I was reluctant to try Ramen Noodles, but after a lil’ taste from my hubby, needing a quick fix meal, and the genius of my youngest son, Jordon (who actually came up with this recipe), I am sold!  So, with a little ground sausage, leftover BBQ chicken, Guidry’s Creole Onions (chopped onion mixture), beef or chicken broth, Authentic Soy Sauce, and Ramen Noodle packets a series of new dishes was born.  Here are some pics of the results.

BBQ Chicken w/o Peas

The basic recipe is simple.  Put noodles on to boil and prep as directed.  Brown or warm your leftover sausage, beef, turkey, or chicken with onion mixture.   Add soy sauce and broth, then stir in noodles and packets to taste.  As a final touch, add some peas and a lil’ parsley for color.

For another great addition, try some toasted wanton wraps, which we also made as a desert.  We brushed them with water so the edges would stick, filled them with some leftover choco coated pecans, and folded them up to close.  We then fried and dusted them with Hershey’s Cocoa.  It was a perfect combo.  The coco broke up the sweetness and the desert itself went well with this savory dish.  Not bad for using what you have on hand and works great with leftovers.

I received this one from my sister-in-law via email  Hmm… ?

Try at your own risk.   I am not cleaning your microwave… ha!

Recipe: 5 Minute Chocolate Mug Cake

Ingredients

  • 4 tablespoons flour
  • 4 tablespoons sugar
  • 2 tablespoons cocoa
  • 1 egg
  • 3 tablespoons milk
  • 3 tablespoons oil
  • 3 tablespoons chocolate chips (optional)
  • A small splash of vanilla extract
  • 1 large coffee mug

Instructions

  1. Add dry ingredients to mug, and mix well.
  2. Add the egg and mix thoroughly.
  3. Pour in the milk and oil and mix well.
  4. Add the chocolate chips (if using) and vanilla extract, and mix again.
  5. Put your mug in the microwave and cook for 3 minutes at 1000 watts (high). The cake will rise over the top of the mug, but don’t be alarmed!
  6. Allow to cool a little, and tip out onto a plate if desired.

Note: My sister-in-law suggested topping with strawberries or something like that.  I also think this may be the recipe Lisa mentioned on her blogaversary.

<– So, I bought the cookbook.  It’s centered around the Mediterranean diet, which for me is  a balancing act.  We’ll see… ??  Again, this is another recipe I haven’t tried, so you’ll have to judge for yourself.  (Don’t you just love it when people do that?  No really, I’m just trying to get this stuff out there.  Besides, feedback is always good… ha!)

  • Soup:

8 cups water

3 celery ribs and carrots, chopped

2 garlic cloves, minced

1 tbsp. fresh parsley, chopped

1 tsp. basil

1 bay leaf

Sea salt and freshly ground pepper to taste

  • Dumplings:

1 1/3 cups flour

1/2 tsp. Sea salt

1/4 teaspoon freshly ground pepper

1 egg, beaten

1 1/2 tbsp. evoo

2 tbsp. fresh cilantro, chopped

  • To make soup:

Combine water, celery, carrots, garlic, parsley, basil, bay leaf, Sea salt, and pepper to taste in a large kettle over med.-high heat.  Reduce and simmer, covered for 30 min.

  • To make dumplings:

Combine flour, Sea salt, and pepper in a bowl and mix well.  Combine egg, evoo, milk, and cilantro in another bowl and mix well.  Add the egg mixture to the flour mixture and stir until a stiff batter forms.  Shape into 1 in. balls and gently drop into soup.  Simmer uncovered for about 3 min., or until dumplins float.

To be honest, I would prefer my mom’s method for dumplings.  Are you ready for this?  Just break apart your fave canned biscuits and add to the soup.  You can just roll in the cilantro and other seasonings for the flavor, and you can even use the whole wheat biscuits.   How’s that for figure friendly?

(Note: I reworded a lil’.  Hope it’s easier to read.)
