In honor of Cake Week and Chocolate Friday, I am posting a very special recipe for you.  It’s called Ding Dong Cake.  Yes, just like the treats you ate as a child. ding-dongs Doesn’t it just take you back?  My sister makes this awesome cake and I wanted to post her recipe.  For now, I ‘ll settle on the one found at Cooks.com.  You know everybody LOVES Ding Dongs so you just can’t go wrong!  Drop by Lisa’s and have some more cake at Stop and Smell the Chocolates.

Recipe: Ding Dong Cake

Ingredients

  • Devil’s food chocolate cake
  • 5 tbsp. flour
  • 1 c. milk
  • 1 stick butter
  • 1/2 c. Crisco
  • 1 1/2 c. sugar
  • Chocolate icing

Instructions

  1. Bake cake according to directions; freeze cake in freezer for 1 hour.
  2. Split, making 4 layers. Mix together flour and milk and cook until thick; cool.
  3. Add butter, Crisco, and sugar and whip on high speed for 10 minutes.
  4. Fill in between layers and ice with chocolate icing.

This is absolutely one of my all time favorite cakes, which my mother traditionally made for my birthdays.  I love making it any time of year, but it is perfect in  spring and summer as a light refreshing treat.  You can even add strawberries to make stripes and berries for stars on the Fourth of July.  What could be better than that?

*You may also want to try orange cake and jello as a variation, similar to the Orange Dreamsicle Cake.  I have often thought about a chocolate respberry version as well.

Recipe: Strawberry Jello Cake

Ingredients

  • 1 package strawberry cake mix
  • 2 packs strawberry jello
  • 1-2 small tubs Cool Whip

Instructions

  1. Simply prepare cake and jello according to package directions.
  2. Once cooled, poke holes in cake with a fork or skewer. Then, ladle in jello as desired.
  3. Place in fridge to cool then top with Cool Whip.
  4. Return to fridge and allow jello to set for about 2 hours and serve with any remaining jello on the side.
